They can be used until they bloom. Pick over carefully, wash in salt water and rinse in several waters. Put in boiling water with a piece of salt pork. Boil 1 hour. Drain well, add salt and boil another two hours. When well done and tender turn into colander and drain.
My G-aunt told me about different wild plants that they ate growing up. I know most people find dandelions to be a nuisance and spray pesticides to get rid of them. I have never tried eating them before, may try them this summer to see what they taste like. I'm not too sure about adding more salt after they have cooked the first hour, have been cutting back on salt, I would think the salt pork would be enough!

Dandelions tend to be a little bitter, at least to me. I've read some medicinal properties of it before....would have to refresh my memory on that subject.

Strong tonic have stimulant and diuretic properties. Mild teas aid in digestion and sometimes relieve stomach cramps. Leaves are also very high in vitamin A which added to a salad is healthy.
A tonic is great for all-around medicinals for maintaining good health. A tonic is made by steeping a small palmful of leaves in one cup of hot water. Take one-half cup in the morning and one-half cup in the evening.
A milder tonic can be made from the dried young leaves. Stronger can be made from the young,green leaves.

I've ate dandelions before. My mom always made them when I was a kid. She always had me pick the dandelion flowers, then we would wash them. Then we would dip them in raw egg, put some type of breading on them and cook them in a pan. They are so good.

Wado Eden for sharing that! I'll have to try them next time we get some in the yard, had a whole bunch before we mowed! Do you know if she used flour, cornmeal, or bread crumbs for the coating?
